Salted Toffee Matzo aka Matzo Crack

Every year for Passover my mom buys the giant 5 lb box of matzo and every year we are left with 2-3 boxes at the end of the holiday that goes to waste. Lets be real, its not the most tasty item in the world and after being force fed it for a week straight, no one wants to eat anymore of it then they have to.

I was originally going to make this at the beginning of the holiday but time got away from me and I ended up making it last night [Passover ends tomorrow night], but it is so delicious that I am going to just turn the rest of the matzo in this toffee candy. Completely covered in butter, sugar, & chocolate..problem solved!

Chocolate Toffee Matzo
(inspired by here)
- 1 1/2 cup light brown sugar
- 1 1/2 cup butter
- 1 tbsp vanilla
- 1 tsp pink Himalayan salt [or whatever kind you have]
- 6 to 7 pieces of matzo
- 1 cup milk chocolate chips
- 1/2 cup white chocolate chips

Preheat oven to 350. Line a half sheet pan really well with foil. Spread matzo evenly over pan, breaking some pieces to fit all of the crevices.

Bring the sugar and butter to a boil over medium heat. Once boiling, boil for 3 minutes until it becomes emulsified and thick. Turn off heat, add the vanilla & salt [do not at the vanilla at the beginning, it will evaporate while cooking otherwise]

Pour over the matzo and spread evenly with spatula. Bake for 15 minutes until thick and bubbly.

Remove from the oven and sprinkle the chocolate evenly over the pan. Let it sit on there for a couple minutes, it will melt and be easy to spread evenly.

Stick in the fridge for 15 minutes for everything to set up and harden nicely. Shatter into random pieces and enjoy!
